Meet winemaker Celine Vallois from Champagne HATT et SÖNER as she visits Amsterdam for two unique dinner events on the 10th of March.
Straight out of la Côte des Blancs we propose two elegant and champagne fueled dinners at the classy and cozy Connaisseurs Bohémes in Amsterdam. The dinner consists of 5 courses prepared to perfectly complement the HATT et SÖNER range of Blanc de Blancs champagnes.

When Joseph Ruscon celebrated his 98th, and last, birthday the occasion was of course fêted with the opening a bottle of champagne dedicated to the man himself, Le Grand-Père, a bottle that holds a story, our story, that began many years ago.
In the seventies Joseph met a young winemaker, Francois Vallois who was making Blanc de Blancs Champagnes. The Vallois family had worked in viniculture for four generations and thus had a proud tradition behind them. But when Joseph’s son, Michel received a phone call from Francois Vallois in 2006 he heard the sadness in Francois’s voice that said. “My daughters do not wish to take over the vineyard”.
With this call, a seed was planted in the mind of Kristofer Ruscon, Michel’s son, for what was to become HATT et SÖNER Champagne.
Today HATT et SÖNER has taken many of the steps to follow along the path we set out on over a decade ago including the joyous change of heart by Céline Vallois, Francois’ daughter who took over as head winemaker in 2021.
We invite you to meet Celine Vallois, her colleague Johanna Bertilsson and HATT et SÖNER co-founder Mathias Kahn on this intimate evening.
